Chez Jolie’s younger sibling, La Petite Soeur, has grown up and found its own identity—a more independent and punk-inspired character. While wine has traditionally taken center stage, the spotlight is now shared with an evolving food menu. With the addition of Max Duhs leading the kitchen, the menu is shaped by seasonal ingredients, remaining dynamic and ever-changing. An example of this is our “Saucisse Bâtard” – a homemade sausage reflecting our commitment to creating food that is both flavorful and straightforward. Drawing inspiration from Sweden and the Mediterranean, as well as touches of Asian cuisine, we take cues from across the globe without being constrained by traditional boundaries. Our focus is on offering generous, well-crafted dishes in a lively atmosphere reminiscent of a charcuterie and wine bar.
Who is our new colleague and head chef, Max?
I grew up in Sigtuna and am now married with two kids. I’ve essentially grown up in the restaurant world and have been working with food for nearly 30 years. My journey has taken me through countries including France, Switzerland and England. In recent years, I’ve been the head chef at Svartengrens and NOOK, and most recently, I was part of the opening team for Bar Montan.
What can guests expect at Bâtard?
I don’t want to change much; I’d rather add my personal touch and help enhance the experience. Guests can expect hearty, indulgent dishes for those with an appetite, as well as charcuterie for anyone looking for a light snack to pair with their wine.
How will the relationship with big sister Chez Jolie work?
We’ll operate entirely separately from Jolie, meaning there won’t be any French cuisine here. Of course, we’ll collaborate as a team on certain matters, but we aim to establish our own distinct identity.
Since it’s still a wine bar, how will wine and food interact?
The food will be delicious and generous, making it easy to pair with wines. We’ll also work closely to create special dishes served as “tonight only” offerings, ensuring a seamless connection between the menu and the wine selection.
