While wine has traditionally taken center stage, the spotlight is now shared with an evolving food menu. With the addition of Max Duhs leading the kitchen, the menu is shaped by seasonal ingredients, remaining dynamic and ever-changing. An example of this is our \u201cSaucisse B\u00e2tard\u201d \u2013 a homemade sausage reflecting our commitment to creating food that is both flavorful and straightforward. Drawing inspiration from Sweden and the Mediterranean, as well as touches of Asian cuisine, we take cues from across the globe without being constrained by traditional boundaries. Our focus is on offering generous, well-crafted dishes in a lively atmosphere reminiscent of a charcuterie and wine bar.<\/em><\/p>\n<p><strong>Who is our new colleague and head chef, Max?<\/strong><br \/>\nI grew up in Sigtuna and am now married with two kids. I\u2019ve essentially grown up in the restaurant world and have been working with food for nearly 30 years. My journey has taken me through countries including France, Switzerland and England. In recent years, I\u2019ve been the head chef at Svartengrens and NOOK, and most recently, I was part of the opening team for Bar Montan.<\/p>\n<p><strong>What can guests expect at B\u00e2tard?<\/strong><br \/>\nI don\u2019t want to change much; I\u2019d rather add my personal touch and help enhance the experience. Guests can expect hearty, indulgent dishes for those with an appetite, as well as charcuterie for anyone looking for a light snack to pair with their wine.<\/p>\n<p><strong>How will the relationship with big sister Chez Jolie work?<\/strong><br \/>\nWe\u2019ll operate entirely separately from Jolie, meaning there won\u2019t be any French cuisine here. Of course, we\u2019ll collaborate as a team on certain matters, but we aim to establish our own distinct identity.<\/p>\n<p><strong>Since it\u2019s still a wine bar, how will wine and food interact?<\/strong><br \/>\nThe food will be delicious and generous, making it easy to pair with wines.
